This afternoon, we also took a moment to sit down with Wes for an exclusive session of no-holds-barred questions. Read through our conversation below.

What’s your story, and how did you end up running restaurants/bars in Utrecht?
I’ve aspired to be a restaurant owner ever since i was around 10 years old, I grew up with an entrepreneurial father and he’s always guided me to learns as much tricks of the trade as possible to eventually know enough and open a restaurant of my own. With the massive help and guidance of my fellow partners of course.
Utrecht is crawling with cool spots. If you had to kidnap someone for a drink, why should it be here and not next door?
In both The Streetfood Club and Rum Club there’s an energy that no other place has in Utrecht. The vibe is high, it’s busy, the music is very present and staff is running around to accommodate all the guests. You choose one of the very cool and different spots, order a cocktail, sit back and watch the night unfold.

Overhearing a couple going at it in the bathroom of The Streetfood Club, quietly waiting for them to come out of the stall and only saying one word: ’Tissue?’ The embarrassed looks on their faces is a thing I will never forget. Never seen them since.
What’s one thing you’d never allow on your menu, even if it became the hottest trend?
Never say never, you can only limit yourself...
Running a place like this means long nights. What's your go-to guilty pleasure snack after closing?
Although my nights are not as long as they used to be, my go-to guilty pleasure is either a piece of fried chicken or Gyozas, you can never eat enough of those.
Who would be the dream guest to walk through that door and sit at your bar—living or dead, doesn’t matter?
Anthony Bourdain, a troubled man with a big heart, bigger knowledge of food and drinks and countless badass stories about life, love and death.
